Bruschetta
The bread italians use for this tastes
more like our soda bread than regular white. It is typically called Ciabatta.

This is just sliced bread that is toasted plain.
Out of the toaster, you scrape raw garlic cloves along the top lightly. Keep it in a place
where it stays completely dry and crispy.
Topping
 | Slice
a mixture of good tomotoes that have had all the seeds removed. Roma is probably the best
for this. Dice them into equal size pieces. |
 | Put a good heavy sprinkle of salt on them and let
them sit out on the counter for a few hours to extract some of their water. When you are
ready to serve, mix some basil in with the tomotoes. |
 | On the toast drizzle low acidity, cold pressed
virgin olive oil (the best you can find) and top with tomatoes. Serve as fresh and crispy
as you can make it. |
