Spaghetti with Meat Balls

I try to make at least 4 meatballs per person because someone always picks them out and leaves the rest of the sauce. These are the porportions given to me in class, but I make twice the balls versus pasta. You will need linguini cooked aldente. Once the dish is ready just toss the sauce and the noodles together in a warm serving dish.

Red Sauce

½ Purple onion, chopped and sauteed "Soffritto"

1 teaspoon fennel seeds

1 sausauge with the skin or casing removed.

Chili pepper

2 Cloves of garlic

1 pound (2-3 Cups) of basic red Salsa Di Pomodoro sauce

1 Cup of water

1 Tablespoon tomato paste

Bring all the ingredients to a boil and simmer until all ingredients are combined.

Meatballs

½ pound of ground beef

2 eggs

3 Tablespoons parmesean

3 Tablespoons Bread Crumbs (Seasoned)

Salt

Pepper

1 Clove of garlic, pressed

1 Tablespoon fresh chopped parsley

Combine all the ingredients. Give it 30 squeezes. Drop into slow boiling sauce. Boil for 45 minutes.
