Pepperonata

Think of this as Carmelized Peppers.  It is a wonderful side dish to any pasta or meat dish.

2 Red Bell Peppers

2 Yellow Bell Peppers

1 medium size onion, sliced

1 Crushed clove of garlic

2 Tablespoons of Salsa di Pomodoro

2 Tablespoons of extra virgin olive oil

Fresh Basil

Salt & Pepper to taste.

Cut the peppers and into big pieces approx the same size, so they cook evenly.   Begin by cooking the onion over low heat for about 10 minutes until it becomes translucent. Add the garlic, peppers, pomodoro sauce, salt & pepper. Cook covered for 15 minutes and then about a half hour with the lid removed over low to medium heat.   At the end, before serving sprinkle some freshly torn basil.  (This is great cold the next day.)
