Posole

Crock Pot Posole

Lynne puts these in around noon to serve at 6 or 7 - low heat.

 

3 cans tomatoes - i like to use peeled stewed for this project.  Just smash them and let the juices etc go into the pot.

1 big can of tomatillos (16 or 24 oz) with the juice dumped in

1 big can hominy (i put these in a colander and rinse and discard water)

1# chicken - cut into pieces that you can eat without bones, skin chunks etc.

1 onion (two small purple ones) - just rough cut them into chunks.

Some roasted garlic – 5/6 cloves or fresh garlic 2 - just smash and leave as chunks

1 can of black beans - drained

Little dried chipotle (depending on the heat you want)

 

Combine above.  If you want to get fancy, you could saute the chicken in olive oil with the garlinc and onions.  Just make sure to cut into small pieces before putting in the crockeroo.  It's pretty tasty just letting it slow cook.

 

When ready to serve, saute some corn tortilla strips and add to the bottom of the bowl with fresh grated cheese (think tortilla soup here) or some crumbled corn chips.  Add a little fresh lime juice and cilantro to your bowl.  YUM!
