Tiramisu

The translation is "Desert of the Gods".

Yum. This recipe is by far my friends favorite request for after dinner treat. It is easy.  Just takes thinking of it the night before. You must promise me one thing… never serve it the same day it is prepared. You are just going to layer a white – mousse-like mixture with the cookie layers. Find a nice glass dish that holds about a quart or more.

Small tub (225) grams of mascarpone* cheese

2 eggs

¼ Cup white sugar

Sprinkle of Cream of Tarter

1 Bag of lady finger cookies

2/3 Cup of coffee

1/3 Cup of your favorite brandy, cognac or port

Shaved Bittersweet Cocoa for topping the dessert. 

Start by separating the eggs. The yolks should go into a big bowl. I beat the yolks with sugar first. Then add mascarpone. The egg whites need to be beaten stiffly in a separate bowl. Add the cream of tarter.  The cream of tarter helps to "set" them. Combine the whites with yolk mixture softly, folding to keep the air in.

Quickly dunk the cookies into a mixture of the coffee and brandy. They get soggy quickly, so run them through one a time and have your serving dish or bowl ready. Layer the cookies first, then the white mousse-like layer, then cookies, etc. I put in the freezer if you need to keep it longer than a day or refrigerator for a full 24 hours prior to serving. The longer it sits the better it tastes. Enjoy!

*Similar to cream cheese, but not a substitute.
